Bellotti Semplicemente Vino Rosso is a natural red wine that is a coupage of Barbera and Dolcetto, produced by Cascina delgli Ulivi.
Cascina delgli Ulivi is a family winery established on a farm. Stefano Belloti was the person who ran it until he died of cancer in 2018. He is considered one of the fathers of biodynamics in Italy: He started making natural wines in 1977 and has cultivated his vineyards following biodynamic principles since 1984. Currently, it is his daughter Ilaria who has taken over the reins from her father and seeks to preserve and transmit his legacy.
Bellotti Semplicemente Vino Rosso comes from vineyards with soil consisting of acid-ferrous red clays. All together the plots cover a total area of about 5 hectares. They are trained according to the Guyot system and cultivated biodynamically. The strains have an average age of 20 years and produce around 40 hectolitres per hectare. They are manually harvested so that the grapes arrive in the winery as healthy and complete as possible.
Bellotti Semplicemente Vino Rosso is made in stainless steel tanks, macerating the must-wine with the skins for about 30 days and fermenting with native yeasts, those present on the grape skins. Afterwards, the malolactic fermentation takes place and lastly the wine ends up ageing for 3 months on its lees. Finally, the wine is gently filtered and bottled.
